- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups low-sodium chicken broth
- 2 cups wide egg noodles
- 3 cloves fresh garlic, minced
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
- 1 tbsp olive oil
- Rinse chicken breasts under cold water and pat dry. Season with salt and pepper.
- In a large pot, heat olive oil over medium heat. Add chicken and cook until golden brown (about 5 minutes per side). Remove from pot.
- In the same pot, sauté minced garlic for about 1 minute until fragrant.
- Pour in chicken broth, scraping any bits from the bottom of the pot. Bring to a gentle simmer.
- Add egg noodles and cook until tender but al dente (approximately 8 minutes).
- Shred or chop the cooked chicken into bite-sized pieces and return to the pot along with soy sauce. Simmer for an additional 3 minutes.
- Serve hot, garnished with fresh herbs if desired.
