  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup bell peppers, diced (any color)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, spinach, bell peppers, cheddar cheese, salt, and pepper until well combined.
  3. Pour the mixture into each muffin cup until about three-quarters full.
  4. Bake for 20-25 minutes or until golden brown and set; they should spring back when touched.
  5. Allow the bites to cool in the tin for 5 minutes before removing.
