- 4 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup bell peppers, diced (any color)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil or cooking spray for greasing
