  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until softened (5–7 minutes).
  2. Push the veggies aside and add diced chicken. Cook until browned on all sides (5–6 minutes).
  3. Stir in the wild rice and pour in the chicken broth. Bring to a boil, then reduce heat and simmer covered for about 45 minutes until rice is tender.
  4. Add minced garlic and dried thyme; cook for an additional 5 minutes.
  5. If desired, stir in heavy cream until well combined. Adjust seasoning to taste.
