  • 2 lbs butternut squash
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ¾ cup seasoned breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp salt (adjust to taste)
  • ½ tsp pepper (adjust to taste)
  • ¼ tsp nutmeg
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash and scoop out seeds. Drizzle with olive oil and season with salt and pepper.
  2. Place cut-side down on a baking sheet and roast for 40–45 minutes until tender.
  3. Let cool slightly, then scoop flesh into a bowl and mash until smooth.
  4. Mix in heavy cream, garlic powder, nutmeg, salt, and pepper. Fold in half of the Parmesan cheese.
  5. Transfer mixture to a greased baking dish, top with remaining cheese and breadcrumbs.
  6. Bake uncovered at 375°F (190°C) for about 25 minutes until bubbly and golden brown.
