Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onions for about 5 minutes until translucent.
  2. Add minced garlic and chopped carrots; cook for an additional 3-4 minutes until fragrant.
  3. Stir in diced potatoes and vegetable broth; bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  4. Add chopped kale and season with salt and pepper; cook for another 5-7 minutes until kale is wilted.
  5. Remove from heat, squeeze fresh lemon juice into the pot, stir well, and serve warm.
