  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp tomato paste
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • 2 cups fresh spinach or kale
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery for 5-7 minutes until softened.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Stir in garbanzo beans, tomato paste, vegetable broth, and dried herbs. Bring to a gentle boil.
  4. Reduce heat and let simmer uncovered for 15-20 minutes to meld flavors.
  5. In the last 5 minutes of cooking, add spinach or kale until wilted.
  6. Just before serving, squeeze fresh lemon juice into the pot.
