  • 1 medium cucumber, grated

  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  3. While the chicken cooks, make the tzatziki sauce by combining Greek yogurt, grated cucumber (squeezed to remove excess moisture), minced garlic, dill, lemon juice, salt, and pepper in a bowl; mix until smooth.
  4. Once the chicken is cooked and rested, slice it into strips. In serving bowls, layer sliced chicken over fresh greens or grains like quinoa or rice.
  5. Top with generous dollops of tzatziki sauce and your choice of diced tomatoes or olives.
