- 2–3 pounds beef chuck roast
- 4 medium carrots
- 4 medium Yukon Gold potatoes
- 2 yellow onions
- 4 cups low-sodium beef broth
- Fresh thyme and bay leaves
- Olive oil, salt, and pepper
- Chop the beef into bite-sized cubes and dice the onions, carrots, and potatoes.
- In a large pot, heat olive oil over medium-high heat. Sear the beef until browned on all sides (5-7 minutes).
- Add diced onions and carrots; sauté until onions are translucent (about 3-4 minutes).
- Pour in the beef broth along with enough water to cover the ingredients; scrape any browned bits from the pot.
- Add potatoes, thyme, and bay leaves; stir well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the meat is fork-tender.
