  • 1 sheet puff pastry (thawed)

  • 2 tablespoons fresh parsley (chopped)

  • Salt and pepper (to taste)
  • 1 egg (beaten for wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface until about 1/8 inch thick.
  3. Season the salmon fillets with lemon juice, salt, and pepper.
  4. Place chopped dill and parsley on top of each fillet.
  5. Cut the pastry into squares large enough to enclose the salmon completely. Place one fillet in the center of each square, fold over, and seal the edges.
  6. Brush each pocket with beaten egg for a golden finish.
  7. Bake for 20-25 minutes or until golden brown.
