Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, melt honey (or maple syrup) and coconut oil together, stirring occasionally.
  3. Remove from heat and mix in rolled oats, dried cranberries, sliced almonds, salt, and vanilla extract until well combined.
  4. Press the mixture into the prepared pan using a spatula or your hands for even packing.
  5. Bake for 20-25 minutes until golden brown around the edges.
  6. Cool completely in the pan before lifting out with parchment paper. Cut into bars of your desired size.
