  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric

Instructions

  1. In a large pot over medium heat, melt 2 tablespoons of butter. Add diced onion and sauté until golden brown.
  2. Stir in minced garlic and cook until fragrant.
  3. Add rinsed lentils, cumin, and turmeric; sauté for another minute.
  4. Pour in rinsed basmati rice and vegetable broth, bringing it to a gentle boil. Reduce heat to low and cover tightly.
  5. After 10 minutes, gently fold in cauliflower florets without disturbing the rice-lentil blend.
  6. Cook covered for an additional 15-20 minutes until both lentils and rice are tender. Let rest off heat for 5 minutes.
  7. Fluff with a fork, then fold in remaining butter along with salt and pepper to taste.
