  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh parsley or mint, chopped

Instructions

  1. Prepare Marinade: In a bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, minced garlic, salt, and pepper.
  2. Marinate Steak: Place flank steak in a resealable bag or shallow dish and pour marinade over it. Seal tightly and refrigerate for at least 30 minutes.
  3. Grill Steak: Preheat grill or stovetop pan over medium-high heat. Remove steak from marinade (discard marinade). Grill for 5-7 minutes per side until charred and juicy (medium-rare recommended).

  5. Assemble Bowls: Slice rested steak against the grain into thin strips. In serving bowls, layer rice or grains as desired; top with steak slices, chopped veggies, and crumbled feta.
