  • 8 corn tortillas
  • 1 can (15 oz) refried beans
  • 2 cups salsa (mild, medium, or hot)
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 cup sour cream
  • 1/2 cup fresh or pickled jalapeños

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Brown the ground meat over medium heat; drain excess fat.
  3. In a bowl, combine cooked meat, refried beans, and half of the salsa.
  4. Spread a thin layer of salsa in the baking dish.
  5. Layer tortillas over salsa, followed by half of the meat-bean mixture and some cheese.
  6. Repeat layers until ingredients are used up; top with tortillas and remaining cheese.
  7. Bake uncovered for about 25 minutes until bubbly and golden brown.
  8. Allow to rest for 10 minutes before serving topped with sour cream and jalapeños.
