Mushroom Chicken is a comforting dish that combines tender chicken, savory mushrooms, and a rich, creamy sauce. Perfect for weeknight dinners or special occasions, it warms the heart with every bite.

  • 4 boneless skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms
  • 4 cloves garlic
  • 2 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Slice the mushrooms and mince the garlic.
  2. In a large skillet over medium-high heat, melt butter. Sear seasoned chicken breasts for 6-7 minutes on each side until golden brown.
  3. Once cooked, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in sliced mushrooms and cook for 5 minutes until tender.
  5. Add chicken broth and heavy cream to the skillet, stirring to combine. Simmer for 5-7 minutes until slightly thickened.
  6. Finish by adding fresh thyme leaves before serving.
