  • 1 cup pumpkin puree
  • 2 large eggs (room temperature)

  • 2 cups powdered sugar
  • 8 oz cream cheese (softened)
  • Orange food coloring (to taste)
  • Mini chocolate chips (for eyes and mouths)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with colorful liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and cinnamon.
  3. In another bowl, mix pumpkin puree, melted butter, eggs, and vanilla until smooth.
  4. Gradually combine wet ingredients into dry ingredients; mix gently until just combined.
  5. Spoon batter into cupcake liners, filling each about two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool in the tin for five minutes before transferring to a wire rack.
  7. For frosting, beat cream cheese and powdered sugar until fluffy; add orange food coloring until desired hue is achieved.
  8. Once cupcakes are cool, pipe frosting on top and decorate with mini chocolate chips.
