Vanilla Cupcakes with Buttercream

Ingredients

For the Cupcakes
1 ½ cups all-purpose flour
¾ cup granulated sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
2 large eggs
1 ½ teaspoons vanilla extract
½ cup milk

For the Buttercream Frosting
2 ½ cups powdered sugar, sifted
½ cup unsalted butter, softened
2 tablespoons heavy cream or milk
1 teaspoon vanilla extract

Instructions

  1. Cupcakes:

    1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.

    2. In a medium bowl, whisk together flour, baking powder, and salt.

    3. In a large bowl, cream butter and sugar using a hand or stand mixer until light and fluffy (about 2–3 minutes).

    4. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.

    5. Alternate adding the dry ingredients and milk, starting and ending with the dry. Mix until just combined.

    6. Divide the batter evenly into the cupcake liners, filling each about ⅔ full.

    7. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.

    8. Let cupcakes cool completely before frosting.

    Buttercream Frosting:

    1. In a large bowl, beat butter until creamy.

    2. Gradually add powdered sugar, ½ cup at a time, mixing on low.

    3. Add vanilla extract and 2 tablespoons cream or milk. Beat on high for 2–3 minutes until light and fluffy. Add more cream if needed for consistency.

    4. Frost cupcakes using a piping bag or spatula.
