Ingredients

  • Boneless, skinless chicken breasts
  • Ripe avocados
  • Whole wheat or spinach tortillas
  • Fresh spinach
  • Ripe tomatoes
  • Red onion
  • Lemon juice
  • Salt & pepper
  • Your favorite dressing or sauce

Instructions

  1. Prep your ingredients by dicing tomatoes, slicing red onions, and chopping spinach.
  2. Heat a skillet over medium heat with olive oil. Season chicken breasts with salt and pepper; cook until golden brown, about 6-7 minutes per side.
  3. Remove chicken and sauté sliced onions in the same skillet for 2-3 minutes until softened.
  4. Slice the cooked chicken into strips.
  5. Assemble the wrap by layering spinach, chicken strips, tomatoes, onions, and avocado on a tortilla; drizzle with lemon juice.
  6. Roll the tortilla tightly from one end to another and slice in half if desired.
