  • 1 cup long-grain rice
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, diced
  • 2 tablespoons fresh dill, chopped

  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups chicken broth or water

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a large baking dish with nonstick cooking spray.
  3. In a bowl, combine the chicken, rice, salt, pepper, garlic powder, and lemon juice. Mix well.
  4. Add enough chicken broth or water to just cover the rice mixture.
  5. Cover the dish tightly with aluminum foil and bake for 45 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. While baking, mix Greek yogurt with cucumber, dill, garlic powder, lemon juice, salt, and pepper in a separate bowl for the tzatziki sauce.
  7. Once baked, fluff the rice with a fork and serve with tzatziki sauce on the side.
