Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix almond flour and sugar until combined. Melt the butter and stir into the mixture with a pinch of salt until crumbly.
  3. Press the crust mixture into the bottom of the prepared baking dish. Bake for 10-12 minutes until lightly golden.
  4. In another bowl, whisk eggs until frothy. Gradually add sugar, whisking until well blended. Mix in lemon juice and zest.
  5. Pour the lemon filling over the warm crust and bake for an additional 20-25 minutes until set.
  6. Allow cooling before slicing into squares and dust with powdered sugar if desired.
