  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water. Cook according to package instructions (about 18 minutes) until fluffy.
  2. Season chicken breasts with lime juice, cumin, paprika, garlic powder, salt, and pepper.
  3. Heat a skillet over medium heat with olive oil. Cook chicken for about 7-8 minutes on each side until golden brown and cooked through (165°F internal temperature).
  4. Add rinsed black beans and halved cherry tomatoes to the skillet; warm through for a couple of minutes.
  5. In serving bowls, layer rice first, then add the chicken mixture on top. Generously dollop guacamole and sprinkle cilantro before serving.
