  • 1 cup unsalted butter (227g)
  • 1 cup dark chocolate chips (170g)
  • 1 cup granulated sugar (200g)
  • 1/2 cup brown sugar (100g)
  • 4 large eggs
  • 1 cup all-purpose flour (120g)
  • 1/2 cup unsweetened cocoa powder (50g)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3/4 cup unsalted roasted pistachios, roughly chopped (90g)
  • 1/2 cup heavy cream (120ml) for ganache
  • 1 cup dark chocolate pieces for ganache (170g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a heatproof bowl over simmering water, melt the dark chocolate and butter until smooth.
  3. Remove from heat and whisk in granulated sugar and brown sugar until well combined.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Sift together flour, cocoa powder, and salt; gently fold into the mixture until just combined.
  6. Fold in chopped pistachios and pour the batter into the prepared pan.
  7. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs attached. Allow to cool completely.
  8. For the ganache, heat heavy cream in a small saucepan, add dark chocolate pieces, stir until melted and smooth. Pour over cooled brownies and garnish with crushed pistachios.
