- 1 cup unsalted butter (227g)
- 1 cup dark chocolate chips (170g)
- 1 cup granulated sugar (200g)
- 1/2 cup brown sugar (100g)
- 4 large eggs
- 1 cup all-purpose flour (120g)
- 1/2 cup unsweetened cocoa powder (50g)
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3/4 cup unsalted roasted pistachios, roughly chopped (90g)
- 1/2 cup heavy cream (120ml) for ganache
- 1 cup dark chocolate pieces for ganache (170g)
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a heatproof bowl over simmering water, melt the dark chocolate and butter until smooth.
- Remove from heat and whisk in granulated sugar and brown sugar until well combined.
- Beat in eggs one at a time followed by vanilla extract.
- Sift together flour, cocoa powder, and salt; gently fold into the mixture until just combined.
- Fold in chopped pistachios and pour the batter into the prepared pan.
- Bake for 25-30 minutes or until a toothpick comes out with moist crumbs attached. Allow to cool completely.
- For the ganache, heat heavy cream in a small saucepan, add dark chocolate pieces, stir until melted and smooth. Pour over cooled brownies and garnish with crushed pistachios.
