  • 5 large egg yolks

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat heavy cream and 1/2 cup sugar over medium heat until the sugar dissolves. Do not boil.
  3. In a bowl, whisk egg yolks with salt until pale and slightly thickened.
  4. Slowly combine the warm cream mixture into the egg yolks while whisking continuously to temper the eggs.
  5. Strain the mixture through a fine-mesh sieve into another bowl.
  6. Distribute the custard into ramekins and place them in a baking dish filled halfway with hot water.
  7. Bake for 30-35 minutes until set but slightly jiggly in the center.
  8. Chill for at least two hours before serving.
  9. Before serving, sprinkle sugar on each custard and caramelize using a kitchen torch or broiler.
