- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz pure cream cheese, softened
- 1 cup sour cream
- ¾ cup apple cider
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 3 large eggs
- 2 tsp vanilla extract
- Preheat oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs and melted butter until resembling wet sand. Press into the bottom of a springform pan.
- Bake crust for 10 minutes; let cool.
- In a large bowl, beat cream cheese until smooth. Gradually mix in sugar, sour cream, apple cider, cinnamon, nutmeg, vanilla, and eggs until combined.
- Pour filling over the cooled crust. Bake for 60-70 minutes until edges are set but center is slightly jiggly.
- Turn off oven and crack the door; cool for one hour before refrigerating for at least four hours or overnight.
- Serve chilled topped with whipped cream or caramel sauce.
