  • 8 oz fresh mushrooms (sliced; cremini or shiitake recommended)
  • 2 sprigs fresh thyme (leaves removed)
  • 1 medium sweet onion (diced)
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • 1 egg (for egg wash)
  • 1 tbsp milk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, melt butter. Add diced onions and minced garlic; sauté until translucent.
  3. Add sliced mushrooms and thyme; cook until mushrooms are golden brown, about 5–7 minutes. Season with salt and pepper; cool slightly.
  4. Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into 4-inch squares.
  5. Place a spoonful of mushroom filling on one half of each square. Brush edges with egg wash, fold over, and seal well with a fork.
  6. Arrange on a parchment-lined baking sheet, brush tops with egg wash, and bake for 20–25 minutes until golden.
