  • 1/2 cup unsalted butter (113g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup brown sugar (100g)
  • 2 large eggs
  • 1 cup all-purpose flour (120g)
  • 1/2 cup unsweetened cocoa powder (50g)
  • 1 tsp espresso powder
  • 8 oz mascarpone cheese (227g)
  • 1 tsp vanilla extract
  • 2 tbsp coffee liqueur (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Melt butter with granulated and brown sugars in a bowl until smooth. Stir in eggs one at a time.
  3. Sift flour, cocoa powder, espresso powder, and salt into the wet ingredients; fold gently until combined.
  4. Pour half the batter into the prepared dish and bake for 15 minutes until slightly set.
  5. Whisk mascarpone cheese, vanilla extract, and optional coffee liqueur in a separate bowl until smooth; spread over baked brownie base.
  6. Add remaining batter on top and swirl with a toothpick for marbling. Bake for an additional 25-30 minutes until set.
  7. Allow to cool before cutting into squares.
