Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line with parchment paper.
  2. In a bowl, whisk together almond flour, baking powder, and salt.
  3. In another bowl, mix ricotta and sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla extract and lemon zest.
  4. Gradually fold the dry mixture into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 30–35 minutes until golden and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
