  • 2 cups long-grain rice
  • 1 can (15 oz) pigeon peas, drained
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tsp adobo seasoning
  • 1/2 cup sofrito
  • 3 cups chicken broth
  • 1 packet sazon seasoning
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, warm the olive oil. Sauté the chopped onion, garlic, and green bell pepper until tender.
  2. Stir in the sofrito, adobo seasoning, and sazon seasoning; cook for about 3 minutes until fragrant.
  3. Add the long-grain rice and mix well to coat with the oils and spices. Then stir in the pigeon peas and chicken broth.
  4. Increase the heat until boiling, then cover and reduce to low heat. Simmer for 20-25 minutes until the rice absorbs all liquid.
  5. Squeeze fresh lime juice over the dish and gently fluff the rice with a fork.
