  • For crumb topping: 1/3 cup flour, 1/4 cup sugar, 2 tbsp melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a bowl, whisk together the flour, baking soda, cinnamon, granulated sugar, and brown sugar.
  3. In another bowl, mash the ripe bananas until smooth but slightly chunky.
  4. Mix in the melted butter and eggs into the mashed bananas until well combined.
  5. Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. To make the crumb topping, mix flour, sugar, and melted butter in a small bowl until crumbly.
  7. Fill each muffin cup two-thirds full with batter and sprinkle generously with crumb topping.
  8. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Let cool for about 10 minutes before transferring to a wire rack.
