  • 4 dried guajillo peppers
  • 2 tsp cumin seeds
  • 1 medium onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 12 corn tortillas
  • 4 cups beef broth (low-sodium)
  • Juice of 2 limes
  • 4 garlic cloves, minced
  • 2 bay leaves

Instructions

  1. Rehydrate guajillo peppers in hot water until soft. Blend with garlic, cumin seeds, and a cup of beef broth until smooth.
  2. Sear the chuck roast chunks in a large pot over medium-high heat until browned on all sides.
  3. Add chopped onion, minced garlic, bay leaves, and the blended marinade to the pot. Pour in remaining beef broth and bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for about 3 hours until the meat is fork-tender.
  5. Shred the meat and reserve some broth for dipping.
  6. Warm tortillas over direct flame or in a skillet. Fill each with shredded meat and top with cilantro and onions. Serve with lime wedges.
