  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Crush Biscoff cookies and combine with melted butter until resembling wet sand. Press into the bottom of the prepared dish. Bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
  4. Pour cheesecake mixture over the cooled crust and sprinkle with additional crushed Biscoff cookies. Bake for 25-30 minutes until set but slightly jiggly in the center.
  5. Allow to cool completely before slicing into squares.
