  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blackberries
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 6 cups mixed salad greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together balsamic vinegar, honey, salt, pepper, and mashed blackberries to create the marinade.
  2. Place chicken breasts in a ziplock bag with half the marinade; seal and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Remove chicken from marinade (discard used marinade) and grill for 6-7 minutes per side until cooked through.
  4. In a large bowl, toss mixed greens with cherry tomatoes and cucumber; drizzle with olive oil.
  5. After grilling, let chicken rest briefly before slicing. Arrange on top of the salad and drizzle with remaining marinade; sprinkle feta cheese on top.
