Blintzes are delightful, thin crepes filled with creamy cottage cheese and sweet fruit that melt in your mouth. Perfect for brunch or dessert, these treats are easy to make and can be customized to fit your taste. Picture golden-brown, perfectly folded blintzes served warm, drizzled with syrup or topped with fresh berries—an irresistible dish that brings friends and family together.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk (or dairy-free alternative)
  • 1 cup creamy cottage cheese
  • 2 tbsp sugar (adjust to taste)
  • 1 tsp pure vanilla extract
  • 2 tbsp unsalted butter (for cooking)

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, and a pinch of salt until smooth.
  2. Heat a non-stick skillet over medium heat and melt butter. Pour in about 1/4 cup of batter, swirling to coat the pan evenly. Cook for 1-2 minutes until edges lift easily.
  3. In another bowl, mix cottage cheese, sugar, and vanilla until creamy.
  4. Place 2 tablespoons of filling on one side of each crepe and fold like an envelope or roll tightly.
  5. Return folded blintzes to the skillet with remaining butter; cook until golden brown on both sides (about 2-3 minutes per side).
