  • 2 lbs chicken thighs (bone-in)
  • 1 large onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 tbsp tomato paste
  • 3 tbsp soy sauce (low-sodium)
  • 1 tbsp brown sugar
  • 6 pimento or allspice berries
  • Salt and pepper to taste
  • Water (enough to cover chicken halfway)

Instructions

  1. Rinse chicken thighs under cold water and pat dry.
  2. Heat oil in a large pot over medium heat. Sauté onions until translucent; add garlic and cook until fragrant.
  3. Stir in bell peppers, thyme, and pimento berries; sauté until softened.
  4. Push veggies aside and sear chicken thighs skin-side down until golden brown on both sides.
  5. Mix in tomato paste, soy sauce, brown sugar, salt, pepper, and enough water to cover chicken halfway. Bring to boil then reduce heat.
  6. Cover pot and simmer for about 45 minutes until cooked through. Serve over rice or with desired sides.
