Butternut Squash Casserole

  • 4 cups butternut squash, peeled and cubed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup whole milk or cream
  • 2 tbsp butter (for sautéing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Boil cubed butternut squash for about 10 minutes until tender. Drain and set aside.
  3. In a skillet, melt butter over medium heat. Sauté onions until golden brown (about 5-7 minutes), then add garlic for an additional minute.
  4. In a bowl, combine cooked squash, sautéed onions and garlic, eggs, milk or cream, and cheddar cheese. Mix until well combined.
  5. Season with salt and pepper. Pour into the greased baking dish and spread evenly.
  6. Top with panko breadcrumbs mixed with melted butter and remaining cheese.
  7. Bake for 30-35 minutes until bubbly and golden brown. Let cool slightly before serving.
