  • 8 oz rotini pasta
  • 1 lb Italian sausage (mild or spicy)
  • 1 cup sliced bell peppers (red and yellow)
  • 1 cup sliced mushrooms
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tsp Italian seasoning

Instructions

  1. Cook the rotini in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and brown the Italian sausage, breaking it apart. Add bell peppers and mushrooms; sauté for about 5 minutes until softened.
  3. Stir in marinara sauce and Italian seasoning; simmer for 5 minutes.
  4. Combine the drained pasta with the sauce mixture, heating on low for an additional 3-5 minutes.
  5. Preheat oven to 350°F (175°C). Layer half the pasta mixture in a greased baking dish, sprinkle with half the mozzarella, then add remaining pasta and top with more cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown.
