Instructions

  1. Dice Yukon Gold potatoes into bite-sized pieces. Rinse under cold water and pat dry.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add diced potatoes, season with salt and pepper, and sauté until golden brown and fork-tender (about 10 minutes).
  3. Add chopped onion and minced garlic to the skillet. Sauté until onions are translucent.
