  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 2 tsp olive oil
  • 1 medium onion, diced
  • 1 cup red enchilada sauce
  • 8 flour or corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat; sauté onion until translucent (about 5 minutes). Add garlic and cook until fragrant.
  3. Cook chicken for about 15-20 minutes until fully cooked, then shred into bite-sized pieces.
  4. In a bowl, mix shredded chicken with half the enchilada sauce and half the cheese.
  5. Spread some sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining sauce over enchiladas and top with remaining cheese. Bake uncovered for 20-25 minutes until bubbly and golden brown.
