- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 2 tsp olive oil
- 1 medium onion, diced
- 1 cup red enchilada sauce
- 8 flour or corn tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- ½ cup sour cream
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat; sauté onion until translucent (about 5 minutes). Add garlic and cook until fragrant.
- Cook chicken for about 15-20 minutes until fully cooked, then shred into bite-sized pieces.
- In a bowl, mix shredded chicken with half the enchilada sauce and half the cheese.
- Spread some sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining sauce over enchiladas and top with remaining cheese. Bake uncovered for 20-25 minutes until bubbly and golden brown.
