Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, lemon juice, salt, and pepper until just combined.
  2. Form small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs in batches until golden brown (8–10 minutes), then transfer to a plate.
  4. In the same skillet, sauté minced garlic until fragrant. Add chicken broth, capers, and lemon juice; bring to a simmer.
  5. Return meatballs to the skillet and cover. Simmer for 10–15 minutes until cooked through. Stir in butter before serving.
