  • 1/2 cup all-purpose flour
  • 2 fresh lemons (juiced and zested)
  • 2 tbsp capers (drained)
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil

Instructions

  1. Pat chicken breasts dry and season with salt and pepper. Dust with flour.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for 30 seconds. Deglaze with chicken broth, scraping up bits from the bottom.
  4. Add lemon juice and capers; simmer for 5 minutes until slightly thickened.
  5. Return chicken to the skillet, spoon sauce over it, and simmer for another 5 minutes.
  6. Stir in butter until melted; garnish with parsley before serving.
