  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack and cheddar cheese blend
  • 1 cup bell peppers (sliced)
  • 1 medium onion (sliced)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp olive oil (plus more for cooking)
  • Sour cream and salsa (for serving)

Instructions

  1. Prepare the ingredients by dicing the chicken into bite-sized pieces and slicing the bell peppers and onion into thin strips.
  2. In a bowl, season diced chicken with cumin, chili powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook the seasoned chicken until golden brown (5-7 minutes). Add bell peppers and onion during the last 3 minutes of cooking.
  4. On one tortilla, layer half of the cheese, followed by half of the chicken mixture, then top with additional cheese before folding it in half.
  5. Wipe out the skillet, add more olive oil, then cook the folded quesadilla over medium heat until golden brown on both sides and cheese is melted (about 3-4 minutes per side).
  6. Remove from heat, let cool slightly, then slice into wedges. Serve with sour cream and salsa.
