  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium yellow onion, finely chopped
  • 1 cup plain breadcrumbs (or panko for extra crunch)
  • 2 large eggs
  • ¼ cup fresh parsley or thyme, chopped
  • Salt and pepper to taste
  • 1 tsp paprika (smoked or sweet)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Boil salted water in a pot and cook chicken breasts until no longer pink (15-20 minutes). Drain and shred.
  3. In a skillet, sauté onions and garlic in olive oil over medium heat until fragrant (3-5 minutes).
  4. In a bowl, combine shredded chicken, sautéed onions and garlic, breadcrumbs, eggs, herbs, salt, pepper, and paprika. Mix until just combined.
