  • 4 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 2 fresh lemons (juiced)
  • 2 tbsp capers (rinsed)
  • 2 garlic cloves (minced)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Rinse cod fillets under cold water and pat dry.
  2. Dredge each fillet in flour, shaking off excess.
  3. In a skillet, melt 2 tablespoons of butter with olive oil over medium-high heat. Sauté cod for 3-4 minutes per side until golden brown, then set aside.
  4. In the same skillet, add remaining butter, minced garlic, and capers; sauté for about 30 seconds before adding lemon juice.
  5. Pour in chicken broth or white wine, scraping the bottom of the pan to release flavor. Simmer for 2 minutes.
  6. Return cod to the skillet, coating it with the sauce for another minute before serving garnished with parsley.
