  • 4 cups crumbled cornbread (homemade or store-bought)
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • ½ cup chopped pecans or walnuts (optional)
  • 3 tbsp butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If making homemade cornbread, bake according to instructions until golden brown. Let cool and crumble into chunks.
  3. In a skillet over medium heat, melt butter. Sauté onions and celery until soft, about 5–7 minutes.
  4. Add vegetable broth, thyme, and sage to the skillet; bring to a gentle simmer.
  5. In a large bowl, combine crumbled cornbread with the sautéed vegetable mixture until evenly coated.
  6. Transfer to a greased baking dish; cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to achieve a golden crust.
  7. Serve warm alongside your favorite dishes.
