Ingredients

Scale
  • 8 oz fettuccine or penne pasta
  • 1 lb large peeled shrimp
  • 8 oz Andouille sausage, sliced
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 medium sweet onion, diced
  • ½ cup freshly grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, sauté the sliced sausage until browned (about 5-7 minutes). Add the shrimp and cook until pink and opaque (3-4 minutes), then remove from heat.
  3. In the same skillet, lower heat and add diced onion and bell pepper; sauté until softened (around 5 minutes). Stir in minced garlic and cook until fragrant (about 1 minute).
  4. Pour in heavy cream and Cajun seasoning; stir well and bring to a gentle simmer for about 2-3 minutes until slightly thickened.
  5. Toss cooked pasta back into the skillet along with shrimp and sausage; mix thoroughly to coat in sauce. Heat through for another minute.
  6. Remove from heat, sprinkle with Parmesan cheese while mixing gently to melt it into the sauce. Garnish with fresh parsley before serving.
