  • 2 medium Yukon Gold potatoes, diced

  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté the onion until translucent (about 5 minutes), then add garlic and sauté for another minute.
  2. Add the chicken breasts to the pot and cook until golden brown on both sides (6-8 minutes each side).
  3. Pour in the chicken broth and add diced potatoes. Simmer for about 15 minutes or until potatoes are tender.
  4. Stir in the corn and heavy cream, bringing it back to a gentle simmer.
  5. Season with thyme, bay leaf, salt, and pepper; simmer for an additional 5-10 minutes.
