Ingredients

Scale
  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes (oil-packed)
  • 1 cup heavy cream
  • 4 cups fresh baby spinach
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Sear chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes for about 1 minute until fragrant.
  4. Pour in heavy cream and add Italian seasoning. Scrape any bits off the pan and let simmer for 3-5 minutes until slightly thickened.
  5. Stir in spinach and Parmesan cheese until melted and combined.
  6. Return chicken to the skillet, coating it in the sauce. Serve over pasta or rice.
