- 1 cup shredded sharp cheddar cheese
- 4 large flour tortillas
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 2 cups cooking oil (vegetable or canola)
- In a large skillet over medium heat, brown the ground beef with chopped onions until cooked through, about 5 minutes. Add garlic, cumin, and chili powder; cook until fragrant.
- Lay out each tortilla and spoon the beef mixture onto the center. Top with shredded cheddar cheese.
- Fold in the sides of the tortillas and roll tightly from the bottom up. Secure with toothpicks if desired.
- Heat oil in a pan over medium-high heat until hot but not smoking. Fry each chimichanga seam side down for about 3 minutes on each side or until golden brown.
