  • 1 cup shredded sharp cheddar cheese
  • 4 large flour tortillas

  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups cooking oil (vegetable or canola)

Instructions

  1. In a large skillet over medium heat, brown the ground beef with chopped onions until cooked through, about 5 minutes. Add garlic, cumin, and chili powder; cook until fragrant.
  2. Lay out each tortilla and spoon the beef mixture onto the center. Top with shredded cheddar cheese.
  3. Fold in the sides of the tortillas and roll tightly from the bottom up. Secure with toothpicks if desired.
  4. Heat oil in a pan over medium-high heat until hot but not smoking. Fry each chimichanga seam side down for about 3 minutes on each side or until golden brown.
  5. Transfer to paper towels to drain excess oil before serving.
