  • 1 cup green cabbage (finely chopped)
  • 1/2 cup carrots (shredded)
  • 2 green onions (chopped)
  • 10 egg roll wrappers
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 2 tbsp low-sodium soy sauce
  • 2 cups vegetable oil (for frying)
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine shrimp, cabbage, carrots, garlic, ginger, green onions, salt, pepper, and soy sauce.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about two tablespoons of filling onto the center.
  3. Fold the bottom corner over the filling tightly. Fold in both side corners and roll away from you until fully sealed.
  4. Heat oil in a deep skillet over medium heat until shimmering. Fry egg rolls in batches for about 3-4 minutes per side until golden brown.
  5. Remove from oil and let drain on paper towels. Serve hot with dipping sauce.
