  • 4 cups fresh corn kernels (about 56 ears)
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (13.5 oz) coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and diced red bell pepper; cook for another 3-4 minutes until soft.
  3. Stir in fresh corn kernels, cumin, chili powder, salt, and pepper. Toast for about 2 minutes.
  4. Pour in vegetable broth and coconut milk. Bring to a simmer and let bubble for about 15 minutes.
  5. For creaminess, blend partially or fully with an immersion blender.
  6. Stir in lime juice and optional cilantro before serving.
