  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup tomato puree
  • 2 tbsp tikka masala spice blend
  • 2 tbsp butter
  • 1 tbsp sugar or honey
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season lightly with salt and pepper. Place in the crockpot.
  2. In a skillet over medium heat, melt the butter and sauté minced garlic and ginger for 1-2 minutes until fragrant.
